There was a significant increase in the concentration of glutamate in the saliva on Day 5, compared to Day 1 (#: P < 0.05). Note that there was a tendency for the glutamate concentration to increase each day of the 5 days MSG session, which suggests that a modest accumulation of glutamate was occurring. On Day 2 through Day 5, the concentration of glutamate was significantly higher in the MSG session compared to placebo session (*: P < 0.05).Back to article page
